How to Store Dried Foods

Note: the dehydrator in the instructions above uses power. If using a solar dehydrator, drying takes longer, and I'd advise getting a book on that. Haven't found a site yet that goes into enough detail for different types of foods. But the above page does give the basics on what to look for in foods (fresh, not over-ripe or bruised), info on preparation, and on how to make sure the foods are dried enough.

If I have time this summer I may post on solar dehydrating, but first, we have to build some solar dehydrators....

I don't know if it helps, but Alton recommends using a regular box since it doesn't cook the fruit. I'm rather in love with the technique, since it uses stuff I have around the house already, and it's pretty simple.
