On YouTube:

Alton Brown - honing and sharpening a knife (two different things).

This one was kind of interesting, since it includes using a stone for grinding as well as the steel for honing. I think the position for honing is safer in the Alton Brown one though.

I wonder if a couple candles or an oil lamp would work too? Also, gives another reason for keeping your knives sharp.

Yup :) Figured they'd get seen by the right person(s) here. Alton Brown is interesting. I don't generally watch cooking shows, but I might consider making an exception once in a while.
