Alton Brown - honing and sharpening a knife (two different things).
This one was kind of interesting, since it includes using a stone for grinding as well as the steel for honing. I think the position for honing is safer in the Alton Brown one though.

I wonder if a couple candles or an oil lamp would work too? Also, gives another reason for keeping your knives sharp.
