Please consider reading this, even if you don't think you have a problem with gluten -- I'm beginning to think of wheat as a "silent killer" :P

Article also talks about not eating too much of GF substitutes either, because of the problems with eating foods that have a high glycemic index... "foods with a high glycemic index make people store belly fat, trigger hidden fires of inflammation in the body and give you a fatty liver, leading the whole cascade of obesity, pre-diabetes and diabetes"

Yes, I still eat chocolate and some GF snacks, but not as much as I used to.

Seriously. I don't have a gluten problem. But I stopped eating grains and three weeks later, I forgot to take my hayfever meds in the height of ragweed season and I found I didn't need them anymore. I haven't been consistently grain-free, but just avoiding wheat (I don't eat bread or pasta daily anymore but I sometimes have naan with Indian food), has made my GI doctor tell me that if he didn't know better, he'd think I was "cured" of UC (which is impossible). I just don't have symptoms anymore.

(I don't substitute with GF foods either.)

Wheat has become a very scary thing. We should avoid it like poison.

That's great to hear!

Yeah, I don't have celiac disease, but I do have allergies (stuff in the air) and asthma, which can be inflammatory conditions, so the wheat probably just makes those worse.

The GF snacks I sometimes eat aren't wheat substitutes, and I've settled on a couple that aren't too sugary. A handful of walnuts and some spinach works as a snack too.

Plus some of the GF "bread" disagrees with me more than the regular stuff... a friend offered me a slice of GF pizza to try, and it was just a horrible experience.

OTOH, I loooove buckwheat pancakes! Too high glycemic to have too often, what with the syrup and all, but a nice treat. I like them better than regular pancakes.

Does gluten also have an effect on arthritic problems?? I'm not much of a bread eater per se, but I do have breaded foods. I generally eat rice because I can't eat nightshades.
